Seasonal Dishes

Our meals are made with plenty of fresh vegetables nurtured by the rich nature of Toyama as well as fresh fish caught that very morning in the sea off the fishing port of Uozu. They are an assortment of superb dishes imbued with the tastes and colors of the season. Similarly, we get freshly polished rice from a specially contracted farm in the town of Kamiichi, and boil it in water from thawing snow flowing down from Mount Tsurugi. It therefore has an excellent flavor, and every grain is permeated with a glutinous texture and sweet taste.
